Cold expression was used almost exclusively for the production of lemon peel oils. The reason for extracting citrus oils from fruit peel using mechanical methods is the relative thermal instability of the aldehydes contained in them.
Essential oil isolated by cold pressing of peels has a characteristics odor and taste of outer lemon peel part. Major components are limonene (60% - 90%), α- and β-pinene (less than 12%), γ-terpinene ( less than 9%), and citral (geranial and neral, less than 3%).
