Definition of taste
Taste is defined as one of the senses, the receptors for which are located in the mouth and are activated by a large variety of different compounds and solutions.
Most investigators usually limit gustatory qualities to four:
Saline
Sweet
Sour
Bitter
Taste is an essentials element of flavor for if one removes the aromatic fraction if foods or beverages or blocked the odor receptors in the nose then one is left with a more or less characterless mass having a sweet salty bitter backnote and possibly a tart lingering after taste.
Other sensory responses may also influence the overall flavor profile and such effects as astringency, pungency, cooling, warming and metallic sensations can be isolated a specific component attributes.
