Odor activity values

An OAV, sometimes called odor unit or odor value, is used to estimate odor potency in terms of the ratio of the concentration of a volatile compound to its odor detection threshold.

The odor activity values (OAVs) were calculated by dividing the concentrations of aroma compounds with the threshold concentration of this substance (odor threshold value [OTV], the minimal concentration that can be detected by human nose).

Odor activity value (OAV) analysis is an instrumental-based approach that could simplify and reduce costs of odor monitoring by dynamic olfactometry. It is often used to know the ‘weight’ of perception of an odorant.

To be able to calculate odor activity value, it is first necessary to exactly quantify the compounds that are deemed to be if interest in a food.
