Sweeteners fall into three categories:
*Nutritive
*Nonnutritive
*High potency
High-potency is the type used in diet beverages, they are many times sweeter than sucrose and are generally noncaloric. There are several high-potency sweeteners available to the world wide beverage developer such as aspartame, acesulfame potassium.
All high-potency sweeteners exhibit a potency range depending upon the application and desired intensity of sweeteners. Neotame is 7000 to 13000 times sweeter than sucrose or 30 to 60 times sweeter than aspartame.
The very high potency means that a much lower dose of neotame is required to have equivalent sweetness by other sweeteners. Low dosage translates into significant cost savings and recued logistics resources.
High-potency sweeteners tend to have some undesirable attributes such as bitterness, aftertastes and lingering characteristics.
